BoneFire Burgers

Mojito BBQ Chicken Sandwich

For the Burgers:

1 kg ground meat (70% beef and 30% pork)
100 gms. Breadcrumbs
1 Tbsp. sea salt
1 Tbsp. dried oregano
1 Tbsp. Extra Virgin olive oil

Mix all ingredients and form into 6 burgers.

For the Sauce:

1 medium-size fresh Hot Pepper (your choice), finely chopped
1 medium Onion, finely chopped
50 ml Extra Virgin olive oil
Saute the pepper and onion in the oil for 5-7 minutes, until soft, then add:
2 Tsp. Sea salt
2 Tbsp. Garlic (fresh chopped or powder)
1 Tbsp. each: Cumin, Coriander, Sweet Paprika
15 ml. Apple cider vinegar
2 Tbsp. Dijon mustard
100 ml. Ketchup
100 gms. Brown sugar
120 ml water

Boil for 5 minutes, then reduce heat to low and cook for an additional 10-12 minutes. Your sauce should have the consistency of honey.


For the BBQ:

Baste the burgers with the sauce and let sit for 20 minutes. Then put the burgers on the hot BBQ grill for 2 minutes – and add another coat of the sauce. Turn and coat the other side. Repeat each time you turn the burger – the outside should be rich and sticky. BBQ until done.
